The Wine Advocate:

I saw Raul Bobet disgorge a bottle of the 2013 Taïka, a sparkling wine produced with the ancestral method with approximately half and half Sauvignon Blanc and Semillon. The idea is to keep the wine some three years in the bottle, and it should be disgorged around October 2016. I tasted this 2013 vintage with and without the liqueur d'expedition, a low dosage provided by a sweet Semillon with some 170 grams of sugar that will leave the wine with some 1.5 grams of sugar, very low. However, I ended up preferring the sample without anything, which was sharp and bone dry, a little aggressive for some, because of its marked acidity. 2013 is a lot higher in acidity, a much cooler year than 2012, more elegant, with more of a distinct character with marked personality, and the effect of the lees is a lot less evident. It's really gorgeous, and I think it can turn into something really beautiful in bottle. The wine will be disgorged in October and I tasted it in mid July. Oct 2016.

TASTING NOTE

Colour: Light green olive color 
Aroma: Mineral notes, milky dairy products in bottle and pineapple fruit. 
Taste: Fine bubble that wraps the mouth without aggressiveness. Complex, saline, fine and with good acidity. Long with a wide range of nuances.

ADDITIONAL INFORMATION

Manual harvest with small boxes of 10 kg of grapes originating exclusively from the farm. Vinified with small tubes of 25 hl at low temperature. Fermentation has stopped when the wine had the appropriate residual sugar to generate the fermentation in the bottle, so that no sugar gens were added in the spray. In this way all the sugar from fermentation in the bottle comes from the same grape.
Aging in the bottle for 42 months.

This wine will be developing in the bottle the complexity of the sparkling cold weather, becoming more and more integrated.
